#makeitmondays: our obsession with the first mess

We've been loving the fall weather lately. It's like summer finally decided to loosen up it's incredibly tight grip and let us breathe.

We're not sure about you guys, but we're loving it.

It's also meant way more time for hot beverages in the morning on our rooftop patio and we couldn't be happier about that. The only thing that does make us happier is finding something to cozy up our usual cup of joe (we're both straight up black coffee drinkers).

A few weeks ago we got our hands on a copy of Laura Wright's The First Mess. To say it has changed our lives for the better is an understatement. Although we won't lie, we haven't gotten past the first 10 pages because we're stuck in breakfast heaven.

6 Medjool dates, pitted 1 can (13.5 ounces) full-fat coconut milk 2 teaspoons pure vanilla extract (we used 2tsp of PCJ's Blackberry <3s Sage instead!) 1 tablespoon sunflower oil (or another neutral tasting oil that is liquid at room temperature) tiny pinch of fine sea salt

If your dates are very soft proceed to the next step. If your dates are not fresh or juicy or soft, place them in a small bowl and cover them with hot water for 5-10 minutes.

Drain the soaking dates.

In a blender, combine the dates coconut milk, vanilla (or your favourite flavour of Penny Candy Jam!), sunflower oil, and sea salt.

Blend on high until you have a smooth and thick liquid with minimal chunks of visible dates.

Over a medium bowl, strain the mixture with a fine-mesh strainer.

Store the creamer in a jar with a tight-fitting lid for one week.

If you're feeling fancy you can steam the cream a bit before adding it to your coffee.
