#makeitmondays: we're celebrating!

As many of you know, Penny Candy Jam started as a passion project. We both had full time jobs and never thought that we'd sell more than a handful of jars here or a half dozen of jars there. They did, after all, make really great bridal shower gifts. 

 

For the past two years we've been working harder than we could have ever imagined to make Penny Candy Jam a household name. We're proud of what we've been able to accomplish while balancing a really awesome pet-filled family, a career in broadcast television and a busy entertainment PR firm

 

As our little jam company that could continued to grow (bigger than we could have ever imagined in just over a year <3!) we quickly realized that Penny Candy Jam would never get any bigger until one of us was brave enough to take the plunge and quit our day job.

 

The thought itself was terrifying. Rent in Toronto is expensive and we had two - house and kitchen. Although we didn't have kids our pets were definitely spoiled and we couldn't imagine not giving them the lives they have gotten used to (oh heeeey Dogs in the 6). But the longer we pushed forward with all three jobs the clearer it became that Penny Candy Jam needed some full-time love. 

 

Fast forward to this weekend when we celebrated Bryce's brave decision to leave his decade-long career in production to become a full time Jam Man. As the brunch maker in our family I decided that that definitely called for a celebration and what screams celebration more than pancakes with jam, right?? That's right, nothing. 

 

So welcome to our very special edition of #makeitmondays, celebration styles. 

 

CELEBRATION PANCAKES ft. PCJ's PLUM <3s RHUBARB + TARRAGON

(this new flavour will be available at markets this summer!) 

1 cup flour 

1 tbsp coconut sugar 

2 tsp baking powder 

1/8 tsp salt 

1 cup coconut milk 

2 tbsp melted (+ cooled) coconut oil 

 

Preheat your griddle (that's right, we have one!) to medium heat. 

 

Combine flour, sugar, baking power and salt in a bowl. 

 

Add coconut milk and coconut oil to the dry mixture and mix until completely smooth. 

 

When your griddle is ready be sure to prepare it (we used coconut oil but whatever you would normally use here works, too!) and get cooking. 

 

Flip once, cook for a few more minutes, top with PCJ's Plum <3s Rhubarb + Tarragon and enjoy!
